Il nostro artigiano di Corigliano Calabro, nel mezzo della Calabria, si è voluto cimentare nella ricerca del limite. Prende un pomodorino verde, quindi tendenzialmente acidulo, ma che deve allo stesso tempo conservare traccia della dolcezza del pomodorino. Lo scava a mano e lo farcisce con una pasta ricavata da melanzane finemente tritate, tonno e una idea di peperoncino. Riesce così a creare un equilibrio complesso e difficile che solo una grande maestria lo rende possibile.

Our supplier of Corigliano Calabro, in the middle of the region Calabria, wants to look for the limit. He takes a green cherry tomato, thus sour by nature, but that has at the same time trace of mild typical of tomatoes. He empties it by hand and he fills it with a "pasta" made with finely ground aubergines, tuna and a pinch of chilli. He creates in this way a complex and difficult balance that only a great craftsman can do.
